Description

A delightful and versatile casserole perfect for any occasion, combining pasta, beans, vegetables, and cheese into a one-pan meal.


Ingredients

  • 2 cups cooked pasta
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked pasta, diced tomatoes, kidney beans, mixed vegetables, half of the cheese, Italian seasoning, salt, and pepper in a large mixing bowl.
  3. Transfer the mixture into a greased casserole dish, spreading it evenly.
  4. Top with the remaining cheese and drizzle olive oil over the top.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

Notes

For extra flavor, consider adding different cheeses or a layer of breadcrumbs on top.
