Description
Delicious grilled chicken skewers marinated in a homemade teriyaki sauce, perfect for barbecues and gatherings.
Ingredients
- 2 lbs. chicken thighs (or breasts), cut into 1″ cubes
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup soy sauce (low sodium recommended)
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger, minced
- 1 tbsp honey
- 1/2 tsp sesame oil
- 8 skewers
- Sesame seeds (for garnish)
- Chopped green onion (for garnish)
Instructions
- Start by making the teriyaki sauce by combining the cornstarch and water in a small bowl.
- Combine brown sugar, soy sauce, minced garlic, rice vinegar, ginger, honey, and sesame oil in a medium saucepan with the cornstarch mixture.
- Heat over medium heat, stirring until the sauce simmers and thickens slightly over about 3-5 minutes.
- Remove from heat and let cool completely.
- Transfer cubed chicken to a large ziplock bag.
- Pour half of the cooled teriyaki sauce over the chicken, seal the bag, and shake to coat thoroughly.
- Marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium heat and thread chicken onto skewers, spacing evenly.
- Grill the skewers for about 20 to 30 minutes, turning every few minutes, until the internal temperature reaches 165°F.
- Baste with reserved teriyaki sauce during the last few minutes of grilling.
- Serve topped with sesame seeds and chopped green onions.
Notes
For extra flavor, marinate chicken longer than 30 minutes. Experiment with different vegetables on skewers.
