Description

A delightful Taco Pasta Salad combining familiar taco ingredients with a comforting pasta base, perfect for picnics, barbecues, or casual dinners.


Ingredients

  • 8 oz rotini or fusilli pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup diced bell pepper
  • 1/2 cup red onion, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions, then drain and rinse under cold water.
  2. In a skillet, cook the ground beef or turkey over medium heat until browned, then drain fat. Add taco seasoning and water according to packet instructions; cook until the water evaporates.
  3. In a large bowl, combine the cooked pasta, seasoned meat, black beans, tomatoes, corn, bell pepper, red onion, cheese, and cilantro.
  4. In a separate bowl, mix together the dressing ingredients.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For the best results, allow the salad to chill to enhance the flavors. You can customize toppings with avocados, jalapeños, or extra cilantro.
