A sticky, savory dish made with seared chicken thighs and a glossy honey garlic sauce, perfect for a quick weeknight dinner.
Ingredients
- 8 boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water (for slurry)
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110g (1/3 cup) honey
- 80ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- ½ tsp chilli flakes
- 1 tbsp finely chopped fresh parsley (for garnish)
- Boiled rice (for serving)
Instructions
- Trim chicken thighs, pat very dry with paper towels, then season evenly with ½ tsp salt and ½ tsp black pepper.
- In a medium bowl, whisk together the honey, minced garlic, chicken stock, rice vinegar, soy sauce, and chilli flakes. Set aside.
- In a small bowl, combine cornstarch with the cold water. Whisk until a smooth, lump-free slurry forms. Set aside.
- Heat vegetable oil and unsalted butter in a large skillet over medium-high heat. Add chicken thighs in a single layer and sear for 3-4 minutes per side until golden brown. Remove chicken and set aside.
- Pour the prepared honey garlic sauce into the pan, bring to a gentle simmer, and scrape up any browned bits. Slowly add the cornstarch slurry while stirring continuously for 1-2 minutes until the sauce thickens.
- Return the chicken to the skillet, toss to coat in the glaze, and cook for an additional minute to warm through. Garnish with fresh parsley and serve over boiled rice.
Notes
For a gluten-free option, swap light soy sauce for tamari. Adjust sweetness by varying the amount of honey.
