Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 3 tablespoons soy sauce
  • 3 tablespoons ketchup
  • 2 tablespoons vinegar (white or rice vinegar)
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste


Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until golden brown and cooked through.
  3. Add the sliced bell peppers and onion to the skillet, cooking until softened.
  4. Mix together the soy sauce, ketchup, vinegar, brown sugar, and cornstarch in a bowl.
  5. Pour the sauce over the chicken and vegetables, and add the pineapple chunks.
  6. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
  7. Season with salt and pepper to taste.
