Description

Warm, soft pretzel dough encasing gooey mozzarella and fragrant rosemary, perfect for snacks or gatherings.

Ingredients

  • 1 1/2 cups warm water
  • 2 tablespoons sugar
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup baking soda
  • 1 egg (for egg wash)
  • 1 cup mozzarella cheese (shredded)
  • 1/4 cup parmesan cheese (grated)
  • 1 tablespoon fresh rosemary (chopped)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Combine warm water, sugar, and yeast in a bowl. Let it sit until frothy (about 5 minutes).
  2. Mix flour and salt in a large bowl. Add the yeast mixture and mix until a dough forms.
  3. Knead until smooth and elastic (about 5-7 minutes).
  4. Let the dough rise in a warm place until doubled in size (about 1 hour).
  5. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the risen dough and divide it into small pieces. Flatten each piece and place mozzarella, parmesan, and rosemary inside. Wrap the dough around the filling to seal.
  7. Bring water to a boil in a large pot and stir in baking soda.
  8. Boil each pretzel for 30 seconds on each side, then remove and place on the baking sheet.
  9. Brush with egg wash and sprinkle with coarse sea salt.
  10. Bake for 12-15 minutes or until golden brown. Serve warm.

Notes

For best results, evenly space the pretzels on the baking sheet, and adjust baking times as needed.
