Description

Delicious stuffed green peppers filled with savory chicken, rice, and sweet pineapple.


Ingredients

  • 4 fresh green bell peppers
  • 1 lb cooked chicken, shredded
  • 1 cup cooked long-grain rice
  • 1 cup crushed pineapple, drained
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Mix the cooked chicken, rice, crushed pineapple, garlic powder, and paprika in a large bowl.
  4. Fill each pepper with the chicken and rice mixture, packing it tightly.
  5. Drizzle olive oil over the filled peppers.
  6. Add some water at the bottom of the baking dish.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and lightly browned.

Notes
