Savory and cheesy meatballs that combine ground meat and sautéed spinach for a flavorful dish perfect for weeknights or entertaining guests.
Ingredients
- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach (sautéed)
- 4 cloves Garlic (minced)
- 1 small Onion (optional, finely chopped)
- 1 large Egg
- 1 cup Breadcrumbs (or oats/almon flour)
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes (chilled)
- 1 tbsp Italian Seasoning
- Salt to taste
- Pepper to taste
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Heat a tablespoon of oil in a skillet and sauté the spinach until wilted. Let it cool and squeeze out excess liquid.
- In a large mixing bowl, combine ground beef or turkey, chopped spinach, minced garlic, onion (if using), egg, breadcrumbs, Parmesan, Italian seasoning, parsley, salt, pepper, and red pepper flakes. Mix gently.
- Chill mozzarella cubes and form the meat mixture around each cube into uniform balls.
- For baking: preheat oven to 400°F, place meatballs on a parchment-lined sheet, and bake for 15–18 minutes until the internal temperature reaches 165°F (Turkey) or 160°F (Beef).
- For pan-frying: brown meatballs in oil over medium heat for 6–8 minutes and finish in a 350°F oven for 8–10 minutes.
- Let rest for 5 minutes before serving.
Notes
Store cooled meatballs in an airtight container for 3-4 days in the fridge. Freeze uncooked for up to 3 months.
