Description

Creamy, easy seafood lasagna roll-ups that combine shrimp, spinach, and ricotta for a delightful dinner.


Ingredients

  • 12 lasagna sheets (cooked al dente)
  • 1 lb shrimp (peeled, deveined, & chopped)
  • 2 cups fresh spinach (chopped)
  • 2 cloves garlic (minced)
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (grated)
  • 1 egg (beaten)
  • Salt & pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté garlic in a bit of olive oil until golden.
  3. Add chopped shrimp and spinach, cooking until the shrimp is pink and spinach wilts.
  4. Combine the cooked shrimp mixture, ricotta, mozzarella, grated Parmesan, beaten egg, salt, and pepper in a mixing bowl.
  5. Spread the filling evenly over the lasagna sheets, roll them up, and place in a baking dish.
  6. Top with roasted red pepper sauce.
  7. Bake for 25-30 minutes until bubbly and golden.
  8. Serve warm.

Notes

For best results, do not skip the rest period after baking to allow the filling to set. Keep an eye on the sauce to avoid soggy rolls.
