Description

A creamy, cheesy filled enchilada recipe with tender chicken, perfect for quick family dinners.


Ingredients

  • 4 burrito-size flour tortillas (or corn tortillas, warmed)
  • 2 cups shredded chicken (preferably rotisserie)
  • 1 packet taco seasoning
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese (or Monterey Jack)
  • 1 can chopped green chilies
  • 1 can diced tomatoes with green chilies (do not drain)
  • 16 oz Queso Blanco Velveeta


Instructions

  1. Preheat your oven to 350°F.
  2. Combine the shredded chicken with taco seasoning in a bowl.
  3. Mix sour cream, green chilies, and shredded cheese in another bowl.
  4. Fill a tortilla with the chicken mixture and cheese mixture.
  5. Roll the tortilla, tucking in the sides, and place it seam side down in a baking dish.
  6. Repeat until all tortillas are filled and arranged in the dish.
  7. Pour the diced tomatoes over the enchiladas.
  8. Layer the sliced Queso Blanco Velveeta on top.
  9. Bake for 20-25 minutes until golden.
