Ingredients

  • 4 chicken thighs (or breasts)
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 2 tbsp vinegar
  • 2 tbsp oil
  • 1 cup fresh cilantro
  • 1 jalapeño
  • 2 tbsp lime juice
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt


Instructions

  1. Begin by preparing the marinade: in a blender, combine garlic, cumin, paprika, oregano, vinegar, and oil. Blend until smooth.
  2. Coat the chicken thighs in the marinade and let marinate for at least 1 hour.
  3. Prepare the creamy green sauce by blending cilantro, jalapeño, lime juice, mayo, and Greek yogurt until smooth.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and grill for 6-7 minutes per side, until cooked to an internal temperature of 165°F (74°C).
  6. Let the chicken rest for a few minutes before slicing.
  7. Serve the chicken with creamy green sauce drizzled on top or on the side.

Notes

For the best results, marinate overnight and ensure all ingredients are fresh. Adjust the sauce’s heat by removing seeds from the jalapeño.
