Description

A simple and delicious one-pan dinner featuring crispy Parmesan crusted chicken, roasted red potatoes, and fresh green beans.


Ingredients

  • 1 1/2 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 T olive oil
  • 2 garlic cloves, minced (for chicken)
  • 1/3 c grated Parmesan
  • 1/3 c breadcrumbs (Italian or plain; add 1 tsp Italian seasoning to plain breadcrumbs)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced (for potatoes)
  • 2 T olive oil (for potatoes)
  • 2 T grated Parmesan (for potatoes)
  • Salt and pepper to taste (for potatoes)
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil (for green beans)
  • 1 garlic clove, minced (for green beans)
  • 1 T Parmesan (optional, for green beans)
  • Salt and pepper to taste (for green beans)


Instructions

  1. Preheat your oven to 425°F (220°C) and prepare your sheet pan by lining it with parchment paper.
  2. Combine the seasoned potatoes in a medium bowl: diced red potatoes, 2 tablespoons of olive oil, minced garlic, salt, and pepper. Toss well.
  3. Spread the seasoned potatoes on one-third of the sheet pan and roast for about 10-15 minutes.
  4. Prepare the chicken by mixing chicken breasts in another bowl with 2 tablespoons of olive oil, grated Parmesan, breadcrumbs, minced garlic, cracked pepper, and salt.
  5. Add the coated chicken breasts next to the potatoes after they become slightly tender.
  6. Toss the green beans in a separate bowl with olive oil, minced garlic, salt, and pepper, then spread them around the other ingredients on the sheet pan.
  7. Return the sheet pan to the oven and bake for an additional 25 minutes until the chicken reaches an internal temperature of 165°F (73.9°C).
  8. Broil on high for an additional 4-5 minutes at the end for crispy potatoes.
  9. Allow everything to cool for a few minutes before serving.

Notes

For a crispier texture, consider brining the chicken beforehand. You can also mix up the cheeses or add fresh herbs for additional flavor.
