Description

A delightful one-pan meal combining juicy chicken with sweet honey and tangy BBQ sauce over savory rice, perfect for busy weeknights and casual gatherings.

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken thighs or breasts
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together honey, BBQ sauce, soy sauce, garlic powder, onion powder, salt, and pepper to create the sauce.
  3. Combine the cooked rice and the sauce in a large oven-safe pan.
  4. Add the chicken on top of the rice mixture, ensuring it is well coated with the sauce.
  5. Cover the pan with foil and bake for 25-30 minutes until the chicken is cooked through.
  6. Remove the foil and bake for an additional 10 minutes to allow the chicken to caramelize.
  7. Garnish with chopped green onions if desired before serving.

Notes

For best results, marinate the chicken in the sauce for a few hours before cooking. You can also add vegetables like broccoli or bell peppers for added nutrition.
