Description

An easy skillet meal combining tender chicken, sweet honey BBQ sauce, and fluffy rice, all made in one pan for minimal cleanup.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup honey BBQ sauce
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables (like bell peppers, corn, and peas)
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5 minutes.
  3. Pour the honey BBQ sauce over the chicken, then add the uncooked rice and chicken broth to the skillet.
  4. Stir in the mixed vegetables.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for 20 minutes, until the rice is tender and the chicken is cooked through.
  7. Fluff the rice with a fork and serve warm.

Notes

For best results, use a heavy-bottom skillet with a snug lid. Let the pan rest off heat for five minutes before fluffing. Adjust salt as needed and spoon pan juices over the chicken for extra flavor.
