Description

Mini baked potatoes are cute, crispy, and fluffy, making them a perfect snack for any gathering.


Ingredients

  • 1 pound small potatoes (baby Yukon Gold or red)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


Instructions

  1. Select small potatoes, preferably baby Yukon Gold or red.
  2. Preheat your oven to 400°F (200°C).
  3. Wash the potatoes thoroughly and dry them with a clean towel.
  4. Prick each potato with a fork to allow steam to escape.
  5. Coat the potatoes with olive oil, sprinkling generously with salt and pepper.
  6. Arrange the potatoes in a single layer on a baking sheet.
  7. Bake for 25 to 30 minutes or until fork-tender.
  8. Remove from the oven and let cool for a few minutes, then slice in half and spoon out a small portion of the flesh.

Notes

These potatoes can be topped with sour cream, chives, cheese, or bacon bits. They are also great for freezing.
