Description

Delightful grilled corn on the cob slathered with creamy sauces and topped with zesty seasonings, a traditional Mexican favorite.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder or chipotle seasoning
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn on the cob for about 10-15 minutes, rotating occasionally, until charred and cooked through.
  3. In a bowl, mix together the Mexican crema, lime juice, chili powder, and salt.
  4. Once the corn is grilled, brush the crema mixture over the corn until well coated.
  5. Sprinkle with cotija cheese and additional chili powder if desired.
  6. Garnish with fresh cilantro before serving.

Notes

For a smoky flavor, use a charcoal grill or add liquid smoke to the crema mixture. Grilling corn with husks can add moisture but increases cooking time.
