Ingredients

  • 1 cup rice
  • 2 cups broth or water
  • 1 can black beans
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Rinse the rice until the water runs clear.
  2. Heat olive oil in a large pot over medium heat.
  3. Sauté onions and garlic until fragrant and translucent.
  4. Add the rinsed rice and stir for a few minutes until lightly toasted.
  5. Pour in broth or water, season with salt and pepper, and bring to a simmer.
  6. Cover the pot and reduce heat to low, cooking the rice for about 18 minutes.
