Description

A creamy, tomato-kissed chicken recipe that’s easy to make and perfect for weeknight dinners, offering rich flavor with minimal fuss.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon dried Italian herbs
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Pasta or rice, for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Add chicken to the skillet and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream, dried herbs, and chopped sun-dried tomatoes. Let simmer for 3-4 minutes until slightly thickened.
  6. Add fresh spinach and cook until wilted.
  7. Return chicken to the skillet and coat in the creamy sauce. Cook for an additional 2-3 minutes.
  8. Serve over cooked pasta or rice and top with grated Parmesan cheese.

Notes

For best results, maintain moderate heat, and let the chicken rest briefly after searing to lock in juices. Adjust seasoning before serving.
