Description

This easy loaded veggie white lasagna is packed with fresh vegetables, creamy sauce, and gooey cheese, making it perfect for dinner or parties.


Ingredients

  • 8 lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 2 zucchini, chopped
  • 2 cups spinach
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, chopped
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • Salt, to taste
  • Pepper, to taste
  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the chosen vegetables into bite-sized pieces.
  3. Melt butter in a saucepan over medium heat.
  4. Whisk in flour to form a roux.
  5. Gradually add milk while stirring until thickened.
  6. Season with salt, pepper, and nutmeg.
  7. Spread a layer of white sauce in a baking dish.
  8. Layer uncooked lasagna noodles, veggies, ricotta, and mozzarella.
  9. Continue layering, finishing with sauce and mozzarella on top.
  10. Cover with aluminum foil and bake for 30 minutes.
  11. Remove foil and bake for an additional 15–20 minutes until golden and bubbly.
  12. Let cool slightly before serving.

Notes

For best results, sauté your vegetables before layering to reduce excess moisture.
