Description

A high-protein, healthy dinner that combines sweet and tangy flavors with fresh ingredients in a one-bowl meal.


Ingredients

  • 2 large chicken breasts (about 400g)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)


Instructions

  1. Whisk together honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper in a bowl.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Allow to marinate for 10-15 minutes.
  3. Heat a skillet over medium heat. Once hot, cook the chicken for about 5-7 minutes per side until golden brown and fully cooked.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
  5. Assemble the bowls by adding warm rice as the base.
  6. Arrange the sliced chicken over the rice.
  7. Add slices of avocado, halved cherry tomatoes, corn, and red onion on top.
  8. Finish with fresh cilantro, Greek yogurt or sour cream, and chili flakes if using.
  9. Serve immediately while everything is warm.

Notes

Allowing chicken to rest after cooking helps retain moisture. Slice against the grain for tenderness.
