Ingredients

  • 800g Raw Chicken Breast, cubed
  • 800g Raw Boneless Chicken Thighs, cubed
  • 3 Tsp Salt
  • 5 Tsp Italian Herbs Seasoning
  • 4 Tsp Garlic Powder
  • 4 Tsp Onion Powder
  • 4-5 Tsp Paprika
  • 6 Tsp Olive Oil
  • 1600g Raw Potatoes, cubed
  • 3 Tsp Garlic Powder (for potatoes)
  • 2 Tsp Chili Flakes
  • Cooking Spray or 3 Tsp Olive Oil (for potatoes)
  • 400-450ml Regular or Evaporated Milk
  • 250g Light Garlic & Herb Cream Cheese
  • 120g Shredded Mozzarella or any Cheese
  • Fresh Parsley, finely chopped
  • Grated Parmesan (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your baking sheets by lining them with parchment paper or lightly spritzing with cooking spray.
  2. Mix the cubed chicken with salt, Italian herbs, garlic powder, onion powder, paprika, and olive oil until fully coated.
  3. Spread the marinated chicken on one of the prepared baking sheets and bake for approximately 20-25 minutes, or until the chicken is fully cooked.
  4. Combine the cubed potatoes with olive oil, Italian herbs, garlic powder, chili flakes, and paprika in a separate bowl, tossing until well combined.
  5. Spread the potatoes on the other baking sheet in a single layer and bake for about 25-30 minutes, turning halfway through, until golden brown and crispy.
  6. Combine evaporated milk, cream cheese, shredded mozzarella, and any additional seasonings in a saucepan over medium heat, stirring until smooth and heated through.
  7. Serve the baked chicken and potatoes with the creamy sauce drizzled over the top, garnishing with chopped parsley and grated Parmesan if desired.

Notes

For the best results, ensure even spacing on baking sheets during cooking to promote consistent roasting. Leftovers make for excellent meal prep options for later in the week.
