A quick and delicious one-skillet meal featuring ground pork, rice, and vegetables.
Ingredients
- 1 lb ground pork
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 can diced tomatoes, undrained
- 2 cups chicken broth
- 1 packet taco seasoning
- 1 cup long-grain white rice
- 1 tablespoon Worcestershire sauce
- 1 cup shredded Cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Prep the ingredients: Start by dicing the onion and bell pepper, mincing the garlic, and measuring out the remaining ingredients.
- Brown the pork: In a large skillet over medium-high heat, add the ground pork along with the taco seasoning. Cook for about 5-7 minutes until browned thoroughly.
- Sauté the vegetables: Add the diced onion and bell pepper to the skillet and cook for about 3 minutes. Then introduce the minced garlic and cook for an additional minute until fragrant.
- Combine with rice and simmer: Pour in the undrained diced tomatoes, chicken broth, long-grain white rice, and Worcestershire sauce. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes.
- Add cheese and serve: Once cooked, take off the heat and sprinkle shredded Cheddar cheese on top. Cover for a few minutes to allow the cheese to melt and garnish with chopped parsley.
Notes
For a creamier texture, consider mixing in sour cream or cream cheese before serving.
