Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup cooked grains (rice, quinoa, couscous, etc.)
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • Optional: Fresh parsley or chives for garnish


Instructions

  1. Start by seasoning the chicken breasts with olive oil, salt, pepper, and any optional spices you choose. Grill over medium-high heat for about 6-7 minutes per side, flipping once, until cooked through and lightly charred.
  2. Toss the broccoli florets with olive oil, lemon juice, and a pinch of salt. Spread them on a baking sheet and roast in a preheated oven at 400°F for about 15-20 minutes. They should become crisp-tender.
  3. Follow the package instructions for your chosen grain. Once cooked, fluff with a fork and keep warm.
  4. Melt 2 tablespoons of butter in a saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the heavy cream, season with salt and pepper, and allow it to simmer lightly until the sauce thickens, around 5 minutes.
  5. Assemble your bowls by layering the cooked grains, sliced grilled chicken, and roasted broccoli. Drizzle the creamy garlic sauce generously over each bowl. Garnish with fresh herbs if desired.

Notes

Marinating the chicken for a few hours can enhance flavor and tenderness. Adjust the roasting time if using frozen broccoli.
