Description

A delightful Greek Chicken Casserole featuring tender chicken, vibrant vegetables, and Mediterranean flavors, perfect for family dinners or gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked quinoa or rice
  • 1 can (14 oz) diced tomatoes
  • 1 cup chopped spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
  3. Add the chicken breasts to the skillet and cook until browned on both sides, about 5-7 minutes.
  4. Stir in the diced tomatoes, chopped spinach, quinoa or rice, sliced olives, oregano, basil, salt, and pepper. Mix well to combine everything.
  5. Transfer the mixture to a greased casserole dish and sprinkle feta cheese on top.
  6. Cover with foil and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
  7. Remove the foil and bake for an additional 10 minutes to brown the cheese.
  8. Serve hot and enjoy your Mediterranean meal!
