- 4 ears of corn on the cob
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 red onion, finely chopped

- 1 tablespoon lime juice

Instructions
- Boil or grill the corn on the cob until cooked, approximately 8-10 minutes. Let cool, then cut the kernels off the cob and set aside.
- In a large bowl, combine the corn kernels, diced red bell pepper, diced cucumber, finely chopped red onion, and any choice of fresh herbs.
