Description

A creamy, savory dish combining rich caramelized onions and melted cheese with fluffy rice, offering a unique twist on traditional French onion soup.

Ingredients

  • 1 cup long-grain rice
  • 4 cups beef or vegetable broth
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup shredded Gruyère cheese (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, until they become caramelized and deep golden brown, about 15-20 minutes.
  2. Stir in the thyme, salt, and pepper, and cook for an additional minute.
  3. Add the rice to the pot and toast it for 2-3 minutes, stirring constantly.
  4. Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and has absorbed the liquid.
  5. If using, stir in the shredded Gruyère cheese until melted and creamy.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

For best results, monitor heat levels when caramelizing onions and adjust the cooking time if needed.
