Ingredients
- 4 chicken breasts
- 1 cup mushrooms, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Warm olive oil in a skillet over medium heat. Add the chopped mushrooms and minced garlic, sautéing until the mushrooms are softened, about 5-7 minutes.
- Combine the sautéed mushrooms, cream cheese, grated Parmesan cheese, salt, and pepper in a bowl. Mix until well blended.
- Carefully slice a pocket into each chicken breast using a sharp knife. Stuff each pocket with the mushroom mixture, ensuring it is full but not overflowing.
- Place the stuffed chicken breasts in a baking dish. Season the tops with additional salt and pepper.
- Bake for 25-30 minutes or until the chicken is cooked through, with an internal temperature of 165°F (74°C).
- Remove from the oven, garnish with fresh parsley, and serve.
Notes
To maintain quality, store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze wrapped in plastic wrap and foil.
