Instructions
- Start by placing the chicken breasts, sliced bell pepper, sliced onion, fajita seasoning, and diced tomatoes in the crockpot.
- Stir to combine all ingredients thoroughly.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and very tender.
- Once done, shred the chicken in the crockpot using two forks.
- Serve the mixture in tortillas, adding your choice of toppings like avocado, cheese, or sour cream.
