Ingredients
- 1.5 cups gluten-free flour
- 1/4 cup brown sugar
- 2.5 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon pumpkin spice
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 large apples
- 2 tablespoons butter
- Juice of 1/2 regular lemon
Instructions
- Preheat the air fryer to 400°F for five minutes.
- Peel, clean, and chop the apples into bite-sized pieces.
- Combine the chopped apples with lemon juice and melted butter.
- In a large bowl, mix gluten-free flour, brown sugar, baking powder, salt, and pumpkin spice.
- Beat the eggs in a separate bowl and stir in vanilla extract.
- Fold in the apple mixture and then combine with dry ingredients, adding milk if necessary.
- Drop spoonfuls of batter into the air fryer basket, spaced adequately.
- Spray the tops lightly with coconut oil.
- Air fry for 3-4 minutes on each side until golden brown.
- Cool before glazing if desired.
