Ingredients
- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon thyme
- 1 teaspoon paprika
Instructions
- Mix the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper in a bowl.
- Form the mixture into meatballs, about 1 to 2 inches in diameter.
- Heat olive oil in a large skillet over medium heat and add the meatballs. Cook until browned on all sides.
- Remove the meatballs and set aside.
- Add the sliced mushrooms to the same skillet and sauté until softened.
- Pour in the heavy cream and chicken broth, add thyme and paprika, and stir to combine. Bring to a simmer.
- Return the meatballs to the skillet and cook for 15-20 minutes, until the sauce thickens.
Notes
For best results, let the meatball mixture rest for 15 minutes before shaping, and try a mix of different mushrooms for added flavor.
