Description

Tender chicken meatballs smothered in a rich, creamy mushroom sauce, perfect for any occasion.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika


Instructions

  1. Mix the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper in a bowl.
  2. Form the mixture into meatballs, about 1 to 2 inches in diameter.
  3. Heat olive oil in a large skillet over medium heat and add the meatballs. Cook until browned on all sides.
  4. Remove the meatballs and set aside.
  5. Add the sliced mushrooms to the same skillet and sauté until softened.
  6. Pour in the heavy cream and chicken broth, add thyme and paprika, and stir to combine. Bring to a simmer.
  7. Return the meatballs to the skillet and cook for 15-20 minutes, until the sauce thickens.

Notes

For best results, let the meatball mixture rest for 15 minutes before shaping, and try a mix of different mushrooms for added flavor.
