Description

A comforting dish featuring tender chicken in a creamy garlic sauce served over soft rice, perfect for busy weeknights.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley, for garnish


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Season the chicken with salt and pepper and add it to the skillet. Cook for 6-8 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. Add the remaining tablespoon of olive oil and sauté the minced garlic for about 1 minute.
  5. Pour in the chicken broth, scraping any browned bits from the skillet. Simmer for 2-3 minutes.
  6. Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens, about 3-4 minutes.
  7. Add the Italian seasoning and return the chicken to the skillet, stirring everything to combine.
  8. Divide the cooked rice into bowls, top with the creamy garlic chicken, and add steamed broccoli florets. Garnish with parsley before serving.

Notes

For extra flavor, consider marinating the chicken in garlic and olive oil beforehand. You can also roast the broccoli for added sweetness.
