Ingredients

  • 14 ounces rigatoni
  • 1 tbsp unsalted butter
  • 11 ounces spicy chorizo sausage
  • 6 garlic cloves (minced)
  • 4 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¾ cup heavy cream
  • ½ cup grated Parmesan
  • 2 tbsp chopped parsley (optional)


Instructions

  1. Prepare your ingredients by mincing the garlic cloves, grating the Parmesan, and removing the casings from the chorizo before cutting it into smaller pieces.
  2. Boil the rigatoni in generously salted water until al dente, then drain, reserving 1 cup of the cooking water.
  3. In a large skillet, heat the unsalted butter over medium heat. Add the chorizo and cook for about 5 minutes, allowing it to brown nicely and release its flavors.
  4. Stir in the minced garlic, letting it cook for around 1 minute until fragrant, and then add the tomato paste. Cook for an additional 3 minutes to develop the flavors.
  5. Mix in the oregano, salt, and black pepper. Slowly pour in the heavy cream and bring the sauce to a gentle boil.
  6. Once boiling, reduce the heat to low and stir in the grated Parmesan until it melts and combines with the sauce.
  7. Toss the cooked rigatoni into the skillet with the creamy sauce, adding about ½ cup of reserved cooking water to achieve the desired consistency.
  8. Taste the dish, adjusting the salt if necessary, and finish with chopped parsley for a fresh touch. Serve immediately and enjoy!
