Ingredients
- 14 ounces rigatoni
- 1 tbsp unsalted butter
- 11 ounces spicy chorizo sausage
- 6 garlic cloves (minced)
- 4 tbsp tomato paste
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ¾ cup heavy cream
- ½ cup grated Parmesan
- 2 tbsp chopped parsley (optional)
Instructions
- Prepare your ingredients by mincing the garlic cloves, grating the Parmesan, and removing the casings from the chorizo before cutting it into smaller pieces.
- Boil the rigatoni in generously salted water until al dente, then drain, reserving 1 cup of the cooking water.
- In a large skillet, heat the unsalted butter over medium heat. Add the chorizo and cook for about 5 minutes, allowing it to brown nicely and release its flavors.
- Stir in the minced garlic, letting it cook for around 1 minute until fragrant, and then add the tomato paste. Cook for an additional 3 minutes to develop the flavors.
- Mix in the oregano, salt, and black pepper. Slowly pour in the heavy cream and bring the sauce to a gentle boil.
- Once boiling, reduce the heat to low and stir in the grated Parmesan until it melts and combines with the sauce.
- Toss the cooked rigatoni into the skillet with the creamy sauce, adding about ½ cup of reserved cooking water to achieve the desired consistency.
- Taste the dish, adjusting the salt if necessary, and finish with chopped parsley for a fresh touch. Serve immediately and enjoy!
