Description
A sweet and smoky weeknight dinner featuring tender chicken thighs glazed with chipotle honey, served over creamy smoked Gouda mashed potatoes.
Ingredients
- 4 chicken thighs
- 1/4 cup adobo chipotle sauce
- 1/4 cup honey
- 1 tablespoon lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 large potatoes (Russets or Yukon Gold)
- 1/2 cup cream
- 1/4 cup butter
- 1 cup shredded smoked Gouda cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Marinate chicken thighs in chipotle honey sauce for at least 30 minutes.
- Place marinated chicken thighs on a baking sheet and bake for 25-30 minutes or until cooked through and caramelized.
- Meanwhile, peel and chop potatoes; boil them until tender.
- Drain potatoes and return to pot, then mash with butter, cream, smoked Gouda, salt, and pepper until creamy.
- Serve the baked chicken thighs over the smoked Gouda mashed potatoes.
Notes
For best results, warm the cream and butter before adding to mashed potatoes. Pat chicken dry to ensure the glaze sticks. Use a thermometer to check chicken doneness.
