Description

A fresh, creamy lunch with rotisserie chicken, avocado, and lime, perfect for quick meals.


Ingredients

  • 1 whole rotisserie chicken
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 2 tbsp minced fresh parsley
  • 3/4 cup mayo
  • 1/4 cup sour cream
  • 2 tbsp fresh squeezed lime juice
  • Salt
  • Fresh cracked black pepper
  • 5 ripe avocados
  • 1 lime – juice only
  • Paprika
  • Chili powder


Instructions

  1. Remove skin and bones from the rotisserie chicken. Shred or dice the meat into 1/2-inch pieces.
  2. Combine chicken, red onion, celery, and parsley in a large bowl.
  3. Whisk mayo, sour cream, and lime juice in a small bowl. Season with salt and fresh cracked black pepper.
  4. Fold the dressing into the chicken mixture until evenly coated. Chill for 15–30 minutes to let flavors meld.
  5. Halve the avocados and remove pits. Scoop a bit more flesh if you want larger cavities.
  6. Spoon the chilled chicken salad into each avocado half. Press gently to pack the filling.
  7. Finish with a sprinkle of paprika and a light dusting of chili powder. Serve immediately.

Notes

Store the chicken salad in an airtight container for up to 3 days. Keep filling and avocados separate to avoid browning.
