Description

A quick and nutritious Chicken Cabbage Stir-Fry that combines tender chicken with vibrant vegetables for a burst of flavor.


Ingredients

  • 1 tbsp butter
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 lb chicken breast, diced
  • 2 cups cabbage, chopped
  • 1 bell pepper, sliced (any color)
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Green onions for garnish


Instructions

  1. Marinate the chicken by combining 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of black pepper in a small bowl. Add the diced chicken and let it sit for 10-15 minutes.
  2. Prepare the sauce by whisking together the remaining 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1/2 teaspoon of black pepper, 1/2 teaspoon of salt, 1/4 teaspoon of crushed red pepper flakes, and the cornstarch slurry.
  3. Heat a skillet over medium-high heat, melt the butter, and stir-fry the marinated chicken for 4-5 minutes until cooked. Remove it from the skillet.
  4. Sauté the sliced onion and minced garlic in the same skillet for about 2 minutes until fragrant.
  5. Add the chopped cabbage, sliced bell pepper, and julienned carrot. Stir-fry for 5-6 minutes until tender but crisp.
  6. Combine the chicken back in with the vegetables, pour in the sauce, and cook for an additional 2-3 minutes to thicken and meld flavors.
  7. Taste and adjust seasonings before serving hot.

Notes

Serve with steamed rice or quinoa. Garnish with green onions for added freshness.
