Description

Chicken and Saffron Rice brings tender chicken and fragrant saffron rice to your table in one simple, creamy skillet.


Ingredients

  • 2 tsp olive oil
  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1 tsp Goya Adobo seasoning
  • 1 (10 oz) package Vigo saffron yellow rice
  • 1 Knorr tomato bouillon cube (optional)
  • 2½ cups water
  • 3 oz white queso dip
  • 2 tbsp milk
  • cooking spray


Instructions

  1. Season the chicken with 1 tsp Goya Adobo seasoning.
  2. Heat 2 tsp olive oil in a deep skillet over medium heat. Spray the skillet lightly with cooking spray if needed.
  3. Add chicken pieces in a single layer. Cook until browned, about 3–4 minutes per side. Work in batches if the pan gets crowded.
  4. Add the Vigo saffron yellow rice to the skillet. Crumble the Knorr tomato bouillon cube into the mix if you use it. Pour in 2½ cups water.
  5. Bring to a boil. Then reduce heat to low, cover, and simmer for 20–25 minutes until the rice is tender and the liquid is absorbed.
  6. Stir in 3 oz white queso dip and 2 tbsp milk. Heat until the queso melts and the mixture becomes creamy.
  7. Fluff with a fork and serve warm.

Notes

For added flavor, sauté a small diced onion before adding the chicken. Adjust salt only after adding queso and bouillon, since they add salt.
