Description

Ingredients

  • 1 lb chicken breast or thighs
  • 1 cup brown rice (or quinoa)
  • 2 cups low-sodium chicken broth (or water)
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup corn (optional)
  • Salt to taste
  • Pepper to taste
  • Spices: cumin, paprika, oregano
  • Fresh herbs: cilantro or parsley (for garnish)


Instructions

  1. Season the chicken with salt, pepper, and favorite spices.
  2. Sear the chicken in a hot skillet until golden brown; remove and set aside.
  3. Add chopped onions, garlic, and preferred vegetables to the skillet; sauté until tender.
  4. Return chicken to the skillet; add rice and broth or water.
  5. Bring to a boil, then lower the heat and cover; simmer until the rice is fluffy.
  6. Check for doneness and add extra broth if needed.
