Ingredients
- 2 medium sweet potatoes, diced
- 1 pound boneless, skinless chicken breasts, cubed
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or your choice)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook until they are tender, about 10 minutes.
- Push the sweet potatoes to the side of the skillet and add the cubed chicken. Season with garlic powder, salt, and pepper.
- Cook the chicken until it’s no longer pink, about 5-7 minutes.
- Pour the BBQ sauce over the chicken and sweet potatoes, stirring to combine.
- Sprinkle with shredded cheese and cover the skillet until the cheese melts, about 2-3 minutes.
- Serve hot, garnished with green onions.
Notes
For a southwestern twist, include black beans and corn. Use different BBQ sauces for added complexity.
