Description

A delicious Baked Vegetable Frittata filled with garden vegetables, cheese, and herbs. Perfect for breakfast, lunch, or dinner.


Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 cup mixed vegetables (bell peppers, spinach, onions, zucchini)
  • 1 cup cheese (cheddar or feta)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Heat olive oil in a skillet over medium heat, add the mixed vegetables and sauté until softened.
  4. Stir in the egg mixture and season with salt and pepper.
  5. Cook for about 5 minutes until the edges begin to set, then sprinkle cheese on top.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is fully set in the center.
  7. Let it cool for a few minutes before slicing. Serve warm or at room temperature, garnished with fresh herbs if desired.

Notes

For best results, use an oven-safe skillet or transfer to a greased baking dish if needed. Sauté vegetables until they just soften but do not fully collapse.
