Ingredients
- chicken (cut into pieces)
- hot peppers (to taste)
- chicken stock
- garlic (minced)
- coconut milk
- curry powder
- onion (chopped)
- bell peppers (sliced)
- salt (to taste)
- black pepper (to taste)
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and garlic, and sauté until the onions are translucent.
- Add the curry powder and stir for a minute to release its flavor.
- Add the chicken pieces and cook until they are browned on all sides.
- Pour in the chicken stock and coconut milk. Stir well to combine.
- Add the hot peppers, bell peppers, salt, and black pepper.
- Bring to a boil, then reduce the heat and simmer for about 30-40 minutes, or until the chicken is cooked through and tender.
- Adjust seasoning as needed and serve hot with rice or flatbread.
Notes
For perfect results, keep an eye on the simmer. A gentle bubble is best. Stir every 8 to 10 minutes. Let the curry rest for five minutes off the heat before serving to let flavors settle.
