A quick and flavorful recipe for tender, juicy pulled chicken made in the Instant Pot, perfect for sandwiches, tacos, or on its own.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in the Instant Pot on the sauté setting.
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the chicken for about 2-3 minutes on each side.
- Remove the chicken and add chicken broth and BBQ sauce to the pot.
- Return the chicken to the pot and seal the lid.
- Cook on high pressure for 10 minutes, then allow to naturally release for 10 minutes before quickly releasing the remaining pressure.
- Shred the chicken with two forks and mix with the sauce.
Notes
For optimal results, ensure the Instant Pot has sealed properly before cooking. Consider adding onions or bell peppers during the sauté step for added flavor.
