Crispy potato layers with silky smoked salmon, perfect for an elegant brunch or light dinner.
Ingredients
- 2 large potatoes
- 100g smoked salmon
- 1 onion, finely chopped
- 2 eggs
- Salt and pepper, to taste
- Oil, for frying
- Sour cream or crème fraîche, for serving
- Chives, for garnish
Instructions
- Peel and grate the potatoes, then squeeze out excess moisture.
- In a bowl, combine grated potatoes with onion, eggs, salt, and pepper.
- Heat oil in a skillet over medium heat.
- Form potato mixture into small patties and fry until golden brown on both sides.
- Stack the rosti with layers of smoked salmon in between.
- Serve warm with a dollop of sour cream and garnish with chives.
Notes
For best results, keep potatoes dry before frying and do not crowd the pan. Adjust seasoning as needed.
