Description

A hearty one-pot meal blending shrimp, smoky sausage, and seasoned rice into a comfort dish with bold Cajun flavors.


Ingredients

  • 1 cup long-grain rice
  • 1 lb shrimp (peeled and deveined)
  • 8 oz smoked sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 green onions (chopped for garnish)


Instructions

  1. Prepare your ingredients by chopping the bell peppers and onion. If using frozen shrimp, allow it to thaw.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté chopped onion and bell peppers until softened.
  3. Add sliced smoked sausage and cook until browned.
  4. Stir in minced garlic and Cajun seasoning; cook until fragrant but be careful not to burn the garlic.
  5. Add the rice, stirring well to coat with flavors. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, add shrimp, cover tightly, and simmer for about 20 minutes until rice is tender.
  7. Fluff rice with a fork, garnish with chopped green onions, and serve hot.

Notes
