Description

Red Beans and Rice delivers smoky, spicy comfort with tender red beans, smoky sausage, and fluffy rice.


Ingredients

  • 1 cup red beans
  • 1 pound smoked sausage, sliced
  • 1 cup rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Rinse and soak the red beans overnight.
  2. In a large pot, cook the chopped onion, bell pepper, and garlic over medium heat until softened.
  3. Add the smoked sausage and cook until browned.
  4. Stir in the soaked red beans, chicken broth, cayenne pepper, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until beans are tender.
  6. Meanwhile, cook the rice according to package instructions.
  7. Serve the bean mixture over the rice and garnish with green onions.
