Ingredients
- 4 large Carrots, peeled and chopped
- 2 tablespoons Maple syrup
- 1 can Chickpeas, drained and rinsed
- 3 cloves Garlic, minced
- 1 cup Yogurt
- 2 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the carrots, then drizzle with olive oil, maple syrup, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 20-25 minutes, flipping halfway through.
- Rinse and drain the chickpeas, then toss with olive oil, salt, and spices.
- Add the chickpeas to the baking sheet in the last 10 minutes of roasting.
- For the creamy garlic yogurt, mix yogurt with minced garlic, salt, and pepper, letting it sit for a few minutes to mellow.
- Serve the roasted carrots and chickpeas topped with a dollop of garlic yogurt.
