Description

Ingredients

  • 4 large Carrots, peeled and chopped
  • 2 tablespoons Maple syrup
  • 1 can Chickpeas, drained and rinsed
  • 3 cloves Garlic, minced
  • 1 cup Yogurt
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the carrots, then drizzle with olive oil, maple syrup, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  4. Rinse and drain the chickpeas, then toss with olive oil, salt, and spices.
  5. Add the chickpeas to the baking sheet in the last 10 minutes of roasting.
  6. For the creamy garlic yogurt, mix yogurt with minced garlic, salt, and pepper, letting it sit for a few minutes to mellow.
  7. Serve the roasted carrots and chickpeas topped with a dollop of garlic yogurt.
