Hobo Casserole is a cozy, layered bake with ground beef, potatoes, cream of mushroom soup, and cheese, perfect for family dinners.
Ingredients
- 1 pound ground beef
- 4 medium potatoes, sliced
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded cheese (cheddar or your choice)
- 1 onion, chopped
- Salt and pepper to taste
- Optional: mixed vegetables (like corn, peas, or carrots)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
- In a greased baking dish, layer the sliced potatoes, followed by the cooked beef mixture.
- Spread the cream of mushroom soup over the beef, then top with shredded cheese.
- If using, sprinkle mixed vegetables on top.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
For best results, slice potatoes to uniform thickness. Drain the cooked beef well to avoid a greasy casserole. Check doneness and broil briefly for a browned top if desired.
