Description

Hobo Casserole is a cozy, layered bake with ground beef, potatoes, cream of mushroom soup, and cheese, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: mixed vegetables (like corn, peas, or carrots)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  3. In a greased baking dish, layer the sliced potatoes, followed by the cooked beef mixture.
  4. Spread the cream of mushroom soup over the beef, then top with shredded cheese.
  5. If using, sprinkle mixed vegetables on top.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly.
  8. Let it cool for a few minutes before serving.

Notes

For best results, slice potatoes to uniform thickness. Drain the cooked beef well to avoid a greasy casserole. Check doneness and broil briefly for a browned top if desired.
