Ingredients
- 2 Chicken breasts
- 2 tablespoons Olive oil
- Juice of 1 Lemon
- 2 cloves Garlic, minced
- 1 teaspoon Dried oregano
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, diced
- 2 Tomatoes, chopped
- 1 cup Feta cheese, crumbled
- 1/2 cup Tzatziki sauce
- 1 cup Cooked quinoa or rice
- Spinach or lettuce, optional
- Bell peppers, optional
Instructions
- Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
- Grill the chicken: Preheat a grill or grill pan and cook the marinated chicken until fully cooked and juicy, about 6-7 minutes on each side.
- Slice the chicken: Once cooked, let the chicken rest for a few minutes, then slice it into strips.
- Prepare the bowls: Start with a base of cooked quinoa or rice, add sliced grilled chicken, diced cucumbers, chopped tomatoes, crumbled feta cheese, and a generous drizzle of tzatziki sauce.
- Customize: Add any additional veggies or greens as desired.
