Description

Healthy Greek Chicken Bowls bring warmth and flavor to a fast, nutritious meal with grilled chicken, fresh vegetables, tangy feta, and creamy tzatziki.


Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • Juice of 1 Lemon
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, diced
  • 2 Tomatoes, chopped
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Tzatziki sauce
  • 1 cup Cooked quinoa or rice
  • Spinach or lettuce, optional
  • Bell peppers, optional


Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
  2. Grill the chicken: Preheat a grill or grill pan and cook the marinated chicken until fully cooked and juicy, about 6-7 minutes on each side.
  3. Slice the chicken: Once cooked, let the chicken rest for a few minutes, then slice it into strips.
  4. Prepare the bowls: Start with a base of cooked quinoa or rice, add sliced grilled chicken, diced cucumbers, chopped tomatoes, crumbled feta cheese, and a generous drizzle of tzatziki sauce.
