Ingredients
1 lb cooked chicken breast, diced or shredded
1 cup pineapple chunks
3 cups shredded cabbage or mixed greens
1 medium carrot, thinly sliced or julienned
1/2 cucumber, thinly sliced
1/4 cup chopped cilantro
1/4 cup toasted macadamia nuts (optional)
1/4 cup mayonnaise or Greek yogurt
2 tbsp lime juice
1 tbsp honey
1 tbsp rice vinegar
1 tsp soy sauce
Salt and pepper to taste
Wonton strips or tortilla chips (optional)
Instructions
1. Cook the chicken using grilling, poaching, or pan-searing, then dice or shred it.
2. Prepare the dressing by mixing mayonnaise (or yogurt), lime juice, honey, rice vinegar, soy sauce, salt, and pepper.
3. Toast macadamia nuts lightly in a pan until fragrant (optional).
4. Combine cabbage, pineapple, carrot, cucumber, and cilantro in a large bowl.
5. Add the chicken and pour the dressing over the mixture.
6. Toss gently until everything is coated evenly.
7. Add nuts and wonton strips for crunch.
8. Serve immediately with lime wedges for extra freshness.

Use leftover cooked chicken to save time.
Add dressing gradually to avoid overdressing.
