A fresh and flavorful grilled chicken salad made with smoky chicken, crisp greens, and bright vegetables.
Ingredients
- 2 chicken breasts
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill over medium heat.
- Season chicken breasts with olive oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let it cool before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the sliced grilled chicken on top.
- Drizzle with balsamic vinegar and toss gently.
- Top with feta cheese before serving.
Notes
For best results, rest the chicken before slicing and dress the salad just before serving to keep greens crisp.
