Description
A quick and flavorful side dish combining tender green beans and earthy mushrooms in a rich garlic butter sauce.
Ingredients
- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Trim the ends off the green beans and rinse them under cold water. Set aside.
- Heat a large skillet over medium heat and add olive oil and 2 tablespoons of butter until melted.
- Add minced garlic and sauté for about 1 minute, until fragrant, being careful not to burn it.
- Add mushrooms and cook for 4-5 minutes until browned and softened.
- Add green beans, season with salt and pepper, and stir to combine.
- Cover the skillet and let the beans cook for about 5-7 minutes until tender but still crisp, stirring occasionally.
- Remove the lid, add the remaining tablespoon of butter, and mix until melted and coated.
- Add lemon juice, stir well, and transfer to a serving dish. Garnish with parsley if desired.
Notes
For variations, consider adding bacon for a smoky flavor or nutritional yeast for a vegan option.
